There comes a point every summer where standing over a hot stove starts feeling like a personal attack.

The house is hot. The laundry somehow never ends. People keep asking what’s for dinner. You’ve been outside watering flowers, running errands, watching ballgames, chasing grandkids, cleaning the kitchen for the seventeenth time, or maybe just trying to survive another Texas heat wave without melting into the driveway.

And somehow…everybody still expects dinner.

That’s exactly why this Crockpot Dr Pepper Pulled Pork has become one of my favorite “save my sanity” meals.

But trust me on this one.

The soda helps tenderize the pork while adding a slightly sweet, rich flavor that pairs perfectly with barbecue sauce. As it slowly cooks all day, the meat becomes incredibly juicy and tender.

The result is pulled pork that practically falls apart when you touch it with a fork.

And once you stir in the barbecue sauce at the end?

Oh my goodness.

It becomes one of those meals people hover around in the kitchen asking:
“Is it ready yet?”

Ingredients You’ll Need

One of my favorite things about this recipe is how simple the ingredient list is.

You’ll need:

  • 4 pounds pork shoulder or pork butt
  • 1 onion, sliced
  • 1 tablespoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 can Dr Pepper
  • 1 cup barbecue sauce
  • Buns for serving

That’s it.

No fancy ingredients.
No complicated prep work.
No thirty-dollar grocery trip for random spices you’ll never use again.

Just simple comfort food that works every single time.

How to Make Crockpot Dr Pepper Pulled Pork

Step 1: Layer the onions

Slice one onion and place it in the bottom of your crockpot.

This helps flavor the meat while also keeping the pork slightly elevated from the bottom during cooking.

Step 2: Add the pork roast

Place your pork shoulder or pork butt directly on top of the onions.

Don’t overthink it.
Just plop it in there.

This is not a stressful recipe.

Step 3: Season the pork

Sprinkle garlic powder, salt, and pepper all over the roast.

That’s your flavor base.

Simple but delicious.

Step 4: Pour in the Dr Pepper

Now for the fun part.

Pour the Dr Pepper around the pork roast.

And yes…this is usually the moment people in the kitchen start asking questions. 😂

But once they taste it later?
Suddenly everybody becomes a believer.

Step 5: Let the crockpot do the work

Cover and cook:

  • LOW for 8–10 hours
    or
  • HIGH for 4–5 hours

By the end, the pork should shred easily with two forks.

If it doesn’t shred easily yet, it simply needs more time.

Step 6: Shred the pork

Remove the pork from the crockpot and shred it with two forks.

Then return the shredded pork back into all those flavorful juices.

This is where the magic really happens.

Step 7: Add the barbecue sauce

Stir in your barbecue sauce and let everything cook another 20–30 minutes until heated through.

The sauce thickens slightly, coats the pork beautifully, and turns this into the ultimate sandwich filling.

Serve on buns with pickles, chips, coleslaw, or whatever makes your heart happy.

The Best Thing About This Recipe? Leftovers.

I honestly think this recipe gets even better the next day.

You can use leftover pulled pork for:

  • Loaded baked potatoes
  • Nachos
  • Quesadillas
  • Sliders
  • BBQ tacos
  • Mac and cheese bowls
